Never The Stool By The Service Well
A single-subject piece explaining exactly what the service well is, why the stool beside it is the worst seat in the room, and what it reveals about a bar's priorities that it put a seat there at all.

What That Corner Is Actually Doing
The service well is the bartender's workstation — the recessed section of the bar where orders get built, where the rail sits flush with the pour mats, where the POS terminal blinks and the printer ticks out tickets. It exists for speed and repetition: the same moves, the same reach, hundreds of times a night. The tools are close together because the bartender does not have time to walk.
None of that is hospitable. Which is why every stool within two feet of a service well is, almost without exception, the worst seat in the room.
The bartender will reach across you or around you on every ticket. Your personal space becomes a thoroughfare. The printer is at ear height. The conversation you thought you were going to have — because you sat at the bar specifically for that — will not happen here; the person behind the bar is looking past you at a tray of drinks for table nine. You are physically adjacent to a bartender and socially nowhere near one.
Trays depart from the service well. Servers collect there, turning their backs to the room while they load drinks. The well attracts noise, movement, and the particular low-grade chaos of a room mid-push. You will be in the middle of it without being part of it.
So why does a stool appear there at all? Usually because someone counted the linear footage and put seats wherever the math permitted. That is bar design as real estate rather than hospitality — filling the perimeter without asking what it is like to sit in any given spot. A room that has done the thinking reads its own layout differently: those stools either vanish or get quietly replaced with something that belongs there, like a wait station or a stack of napkins.
Avoid the service-well stool. And notice that it cost the bar nothing to put it there.
